Crispy Parmesan Chicken
Think you can't eat well on a budget,
think again.
Chicken leg quarters make it easy,
and if you have a family of
leg lovers
like I do,
everyone is happy:)
The crispy coating make you feel like you are eating
fried chicken
{one of my childhood faves}
without the guilt, but still with all of that great flavor
and crunch.
Crispy Parmesan Chicken:
First Street Chicken Leg Quarters
2 cups of plain yogurt
juice of 1 lemon
2 garlic cloves {minced}
chopped parsley {to taste}
1 1/2 cups of Panko breadcrumbs
1/4 grated Parmesan cheese
salt/pepper to taste
Rinse and pat dry the chicken quarters
Combine the yogurt, garlic, lemon juice, and parsley
mix together
In a separate bowl combine the Panko, the Parmesan, and salt and pepper
stir
One piece at a time, coat the chicken in the yogurt,
and then dredge in the crumbs
Place each piece in a buttered baking dish
Cover lightly with foil
Bake @350 for 1 hour
remove the foil and continue baking until the tops get nice and golden
{about another 20 minutes}
I served this with roasted potato wedges and a green salad.

Chocolate Chip {nestle bar filled} Hot Chocolate Brownies
Sorry I couldn't come up with a better title,
but I promise,
these candy filled brownie/cookies
will TOTALLY make up for it.
Last week was our first week back from Christmas break.
Everyone had a great week, but honestly,
I wasn't feeling the lunch packing.
Sugared out over the holidays,
I hadn't really thought of treats for the lunch boxes.
My kids did NOT appreciate my oversight,
not one little bit.
I think I've made up for it in a BIG way this week.
I stocked up on a few of my favorite Nestle items #ChooseSmart -
miniatures
hot cocoa mix
and of course toll house cookie dough

and turned them into one seriously sweet treat.
Chocolate Chip Cookie Brownies
{stuffed with a candy bar}
Hot Chocolate Brownie batter ~
{I used this recipe from Shugary Sweets}
Nestle Toll House Cookie Dough
Nestle Assorted Miniatures {one per cookie/brownie}
1/2 cup of Nestle Hot Cocoa Mix {to make the brownies}
preheat the oven to 350
I chose to use heart shaped molds
muffin tins {lined} would be great, and
they make for easy individual portions for lunch packing
press the cookie dough {1 cookies worth} into the bottom of your pan
top with one miniature bar {I used Nestle, Nestle Crunch, Baby Ruth, and Butterfinger bars}
top with brownie batter
bake for about 11 minutes {this may differ depending on the size pan you use}
when your brownie looks set-up they should be done
cool
